Thiamin
Thiamin, Vitamin B1, zu den wasserlöslichen Vitaminen gehörende, nach Umsetzung mit ATP als Thiamindiphosphat das Coenzym von Carboxylasen und Aldehydtransferasen bildende Verbindung aus zwei heterozyklischen Ringen. Es wirkt insbesondere bei der oxidativen Decarboxylierung des Pyruvats im Citronensäurezyklus. Thiaminmangel führt zu krankhaften Veränderungen im Nervengewebe (Polyneuritis), was sich u.a. in Krämpfen äußert. Früher erkrankten in Ostasien wegen der weit verbreiteten Ernährung mit poliertem Reis Menschen an Beriberi. T. kommt in relativ geringen Mengen in pflanzlichen und tierischen Geweben vor, insbesondere in den Getreiderandschichten und in der Hefe. Es wird auch in den Wiederkäuervormägen gebildet, ebenso im Dickdarm; die daraus resorbierten Mengen reichen aber z.B. beim Menschen nicht aus, um den Bedarf zu decken. Die Wirbellosen und viele Protozoen sind ebenfalls auf Zufuhr von Thiamin angewiesen.
