Maltase
Maltase, α-1,4-Glykosidase, die das Disaccharid Maltose unter Lösung der glykosidischen Bindung in zwei Moleküle D-Glucose spaltet; kommt häufig mit Amylase gemeinsam vor (z.B. im Gerstenmalz; als Verdauungsenzym im Darmsaft und im Pankreassaft).
